Crunchy Crispy French Toast with Rice Krispies

Once upon a time my husband and I would go for brunch every weekend. When we were in Toronto this was easier to do because the options were seemingly endless. In fact I actually made little chits with names of places I wanted to try and threw them in a mug and we would pick one out every weekend and go. That obviously was before the move to the ‘burbs and the babes. Now a brunch out is an occasional treat so when I want something a little less ordinary I better make it myself. I have had a cornflake crusted French Toast at School Bakery & Cafe in Toronto and thought that perhaps I can put my otherwise abandoned box of rice krispies to use here. A little googling showed that this is indeed a thing. This small modification takes the same French Toast I have had a million times into the realm of fun, and who doesn’t want a little bit of fun? πŸ™‚ Because it is so basic I hardly have an exact recipe for it, but here are ‘guidelines’, modify as you please!

Oh and not to sound corny, but I used a French Loaf for my French Toast and the combination of light-crispy-crunchy cereal and the airy loaf is a thing of beauty.

Rice Krispie French Toast
Serves 3-4

3 Eggs
1/2 cup Milk
1 tsp Vanilla Extract
2 tbsp Sugar
1/4 tsp Salt
4-6 pieces of bread
1 1/2 to 2 cups Rice Krispie cereal
Maple Syrup for Serving

Place your frying pan/ griddle on medium heat. Meanwhile combine the first five ingredients, whisk well. I usually do this in a soup plate, makes dredging easier. Then take another soup plate and put your rice krispies in it gently crushing fistfuls as you add them. Check on your pan, if it is hot then add your fat of choice, butter is tastier, canola oil healthier.

When the pan is hot, i.e. a little rice krispie dropped in sizzles then dredge your bread in the egg mixture on both sides followed by the rice krispies. Press the bread gently to ensure that the krispies ‘stick’. Place in your frying pan, lower the heat just a smidge and let it cook for a few minutes on each side.

We had ours with maple syrup today, but I think they would be delicious with an orange syrup, different jams Β or even honey.

    • Try their coconut pancakes (if you’re a coconut person). One of the few things I would actually take from my first born.
